Egg Rolls

1/4 head of cabbage, finely chopped
1 cup shredded carrots
1 cup chopped green onions
1 tsp ground ginger
1 tsp garlic powder
black pepper to taste

Egg roll wrappers
Oil for frying
 
Combine all the ingredients in a large bowl, making sure to coat all the veggies with the spices. Lay out egg roll wrapper and place about 1/4 cup of mixture in the center. Fold wrapper "burrito style" with ends tucked inside.
Heat oil in pan to 375 degrees. Place egg rolls gently in the hot oil with tongs or slotted spoon.

Fry on both sides until golden brown. Remove from oil and place on paper towel to cool. Serve with a dipping sauce of some kind (I prefer duck sauce). Enjoy!
